How to Make Fluffy Pancakes

  1. I've been searching for a good pancake recipe for years. I finally found one that I'm very happy with.

    Ingredients:
    1 1/4 cups all-purpose flour
    1 egg
    1 1/4 cups buttermilk*
    1/4 cup granulated sugar
    1 heaping teaspoon baking powder
    1 teaspoon baking soda
    1/4 cup cooking oil
    pinch of salt

    *if you don't have buttermilk, substitute with 1 1/4 tablespoons of vinegar with 1 1/4 cups of regular milk

    1. Preheat skillet over medium heat. Use a pan with a nonstick surface or apply a little nonstick spray.

    2. Combines all dry ingredients together.

    3. Combine all other ingredients together and then add it to the dry ingredients.

    4. Mix until smooth (about 50 strokes. Do not over mix)

    5. Laddle approximately 1/3 cup of batter into the hot skillet, forming 5 in. circles.

    6. When the edges appear to harden, after a minute or two, flip the pancakes. They should be golden brown.

    7. Cook pancakes on the other side for the same amount of time, until golden brown.

    Makes 8 to 10 pancakes.
